Colbert Collection will expand its presence in Italy with the opening of ExCelle Hotel San Gimignano in 2027. The hotel will emerge from the conversion of a former Dominican complex in the heart of the Tuscan destination. The project marks the brand’s second Italian property following its global debut in Florence.
ExCelle Hotel San Gimignano will feature 33 rooms created from the former monks’ cells. In addition, the property will include a restaurant and a bar. The redevelopment will extend beyond the hotel, transforming the wider complex into a cultural and hospitality destination.
Plans include the restoration of a theatre with capacity for more than 1,000 guests. The wider project will also introduce additional restaurants, retail spaces, event areas and a museum. As a result, the development aims to combine hospitality with cultural activities and visitor services in San Gimignano’s historic centre.
Opera Laboratori is overseeing the renovation. The Italian company specialises in the management and enhancement of cultural heritage sites. Its involvement places the hotel within a broader regeneration project focused on the former Dominican complex.
The opening follows the international launch of Colbert Collection in May 2026, when the brand debuted with Porta Rossa Firenze. The property, previously operating as an NH Collection hotel, became the first hotel under the new brand.
Meanwhile, Colbert Collection is preparing to expand beyond Italy. WestDill Mayfair Hotel London is scheduled to open in the first quarter of 2027, becoming the brand’s second property internationally. With the San Gimignano project, the collection is developing a presence in both established Italian cultural destinations and the London hospitality market.
